Trick 4... pard ruffs my winner to un-endplay me and endplay declarer instead!

GIB's ruff to lead a heart through was good. But there was no endplay on declarer since you played a diamond, a card declarer could ruff in dummy. All declarer has to do is overruff his own ruff in dummy and lead a spade through your K.

If you had played a heart or a club instead of another diamond after winning your ♥Q, declarer would have been endplayed, since dummy must follow suit while declarer is forced to ruff.

The fact that I didn't cooperate doesn't change the fact that GIB made the play that should have led to the endplay of declarer.

Why E-W don't tackle spades immediately after the diamonds run?
